    Preheat & line

    Preheat the oven to 170°C (340°F). Line a 23×23cm baking tin with parchment paper, leaving overhang on two sides for easy lifting.

    Melt chocolate & butter

    Place the chocolate and butter in a heatproof bowl over simmering water. Stir gently until completely melted and glossy. Remove from heat and let cool for 5 minutes — hot chocolate will scramble the eggs.

    Whisk sugars & eggs

    In a large bowl, whisk both sugars with the eggs and vanilla until pale and thick — about 2 minutes with electric beaters. The mixture should fall in thick ribbons when you lift the whisk.

    Combine

    Pour the cooled chocolate into the egg mixture and fold until just combined. Sift the flour, cocoa, and a pinch of salt over the top and fold again — stop the moment no streaks remain. Over-mixing makes cakey brownies.

    Tip: Use a spatula and cut through the middle, then around the edge. That's it.

    Bake

    Pour the batter into the prepared tin and smooth the top. Bake for 22-25 minutes — the edges should be set and the center should still have a slight wobble when you shake the tin. A toothpick should come out with moist crumbs, not clean.

    Cool & salt

    Let cool in the tin for at least 1 hour before slicing — the brownies continue to set as they cool. Sprinkle with flaky salt just before serving.
